
Kale Caesar Salad




Prep Time: 15 minutes
Serves: 2 (large portions)

Ingredients

1/4 cup Eggless Caesar Salad dressing (I use one from Publix’s Greenwise brand)

3 cups pre-cut, washed Kale (I use a bag from Nature’s Greens)

1.5 tbsp lemon juice
-
1/3 cup Shredded Parmesan
-
2 tomatoes, cut into wedges (about 16)

2 avocados, diceD
-
Pepper

Optional: a protein. We, 99% of the time, use grilled chicken breast, but this would also go well with steak, shrimp, seared tuna, and salmon.

Optional: cornbread croutons

Arranging
-
If using a protein, start cooking it now.

Add the kale, tomatoes, and avocado to a large mixing bowl and mix.

Drizzle the lemon juice and salad dressing.

Add pepper, to taste.

If using a protein, cut it up and add to the mixing bowl.

Mix the salad.
-
Serve the salad into 2 bowls.

Sprinkle the cheese on top of the salad. Place the croutons on top if using them.
